Lamb kofta ingredients

  • 500 g lean lamb mince
  • 1 clove of garlic, crushed
  • 1 tsp cumin
  • ¼ cup fresh parsley, chopped
  • 1 tsp lemon rind
  • 1 cup wholegrain breadcrumbs
  • 1 egg

Salad ingredients

  • 2 cups spinach
  • 1 punnet cherry tomatoes, sliced in half
  • ½ cucumber, sliced
  • ¼ red onion, sliced
  • Juice of half of one lemon
  • 4 tbs hummus


  1. Preheat oven to 200°C fan forced. Line a baking tray with non-stick baking paper.
  2. Place the mince, garlic, cumin, parsley, lemon rind, breadcrumbs and eggs in a bowl and stir until well combined.
  3. Roll mince mixture into 2 tbs sized balls and place on lined tray.
  4. Cook balls in oven for 20-25 minutes or until cooked through.
  5. While the koftas are cooking, place all salad ingredients into bowl and toss.

To assemble:
