Ingredients

  • 4 nori sheets
  • 1 ¼ cups of cooked wild rice
  • 1 medium carrot, peeled and thinly sliced
  • 1 Lebanese cucumber, thinly sliced
  • 1 medium avocado, thinly sliced

Method

  1. Cook the wild rice according to packet instructions.
  2. Place the nori sheet, shiny-side down, onto a bamboo sushi mat.
  3. Spread four tablespoons of wild rice onto a nori sheet.
  4. Add one quarter cucumber, carrot and avocado.
  5. Using the sushi mat, roll firmly starting from the end with all the fillings.
  6. Repeat with the remaining nori sheets.
  7. Slice each roll with a sharp knife into 4-5 bite size pieces.
