Beetroot vitality balls

  • 1 cup dates, pitted
  • 1/2 cup whole almonds, unsalted
  • 1 cup cooked beetroot, roughly chopped
  • 1/4 cup cacao powder
  • 1/2 cup desiccated coconut, plus about 1/2 cup for rolling



  1. Add dates and almonds to a small bowl and cover with boiling water for around 5 minutes, to soften.
  2. In a food processor, add in beetroot, drained dates and almonds, cacao powder and ½ cup of coconut.
  3. Pulse until the mixture starts to come together.
  4. On a plate, pour in the remaining coconut.
  5. Using a teaspoon, spoon out the beetroot batter to make around 30 small balls and then roll each ball in the coconut.
  6. Store in the refrigerator. Enjoy!

Danielle and Anissia informed staff that these balls are a quick, healthy snack that can be made in advance, are full of fibre, a source of fruit, vegetables, healthy fats, vitamins, minerals and antioxidants.
