Beetroot vitality balls

Ingredients

  • 1 cup dates, pitted
  • 1/2 cup whole almonds, unsalted
  • 1 cup cooked beetroot, roughly chopped
  • 1/4 cup cacao powder
  • 1/2 cup desiccated coconut, plus about 1/2 cup for rolling

Method

  1. Add dates and almonds to a small bowl and cover with boiling water for around 5 minutes, to soften.
  2. In a food processor, add in beetroot, drained dates and almonds, cacao powder and ½ cup of coconut.
  3. Pulse until the mixture starts to come together.
  4. On a plate, pour in the remaining coconut.
  5. Using a teaspoon, spoon out the beetroot batter to make around 30 small balls and then roll each ball in the coconut.
  6. Store in the refrigerator. Enjoy!

As part of Women's Health Week Danielle, Diabetes SA's Health Promotions Officer provided all Diabetes SA staff with healthy lifestyle tips and information that covered important topics such as heart health, mental and emotional wellbeing, bone health, healthy eating, physical activity and sleep.

Danielle and Accredited Practising Dietitian Anissia also from the Health Services team, conducted a quick healthy cooking demonstration where they made Beetroot Vitality Balls. Danielle and Anissia informed staff that these balls are a quick, healthy snack that can be made in advance, are full of fibre, a source of fruit, vegetables, healthy fats, vitamins, minerals and antioxidants. Staff thoroughly enjoyed the tips throughout the week as well as the cooking demonstration and their goodie bag, courtesy of the Jean Hailes for Women's Health organisation.
