Ingredients

  • ½ cup dry white wine
  • ½ cup water
  • ¼ cup fresh dill
  • ¼ cup chopped parsley
  • 1 shallot, thinly sliced
  • 4 x 150 g salmon fillets
  • Ground pepper
  • Lemon wedges

Method

  1. Add wine, water, dill, parsley and shallots to a deep frying pan and bring to a gentle simmer on medium heat.
  2. Add salmon, skin side down and cover.
  3. Cook for 5–10 minutes, or until salmon is cooked through.
  4. Season with pepper and a squeeze of lemon juice.
