Niçoise salad

Ingredients

  • 2 x cos lettuces, halved
  • 425 g tuna canned in spring water, drained
  • 10 (550 g) baby potatoes, cooked and halved
  • 300 g green beans, blanched and topped
  • 4 eggs, boiled and quartered
  • 250 g cherry tomatoes, halved
  • ½ cup of Kalamata olives
  • ½ cup of fresh parsley, chopped

Dressing

  • 1 tbs olive oil
  • 1 tbs red wine vinegar
  • 1 tbs Dijon mustard
  • 1 tbs lemon juice
  • Ground pepper

Method

  1. Place lettuce, tuna, potatoes, beans, eggs, tomatoes, olives and parsley in a bowl.
  2. Mix dressing and pour over salad, toss gently and season with pepper.
