Blueberry mousse with pistachios

  • 1 cup silken tofu
  • 2 tbs almond meal
  • ½ cup frozen blueberries
  • 1 tbs chia seeds
  • 1 tbs desiccated coconut
  • 1 tsp vanilla essence
  • 1 tsp caster sugar


  • Fresh blueberries to garnish
  • 20g raw pistachio nuts, unsalted
  • 1 tsp desiccated coconut
  • 1 tsp chia seeds


  1. In a blender, add all ingredients except the toppings and blend until smooth.
  2. Pour into two serving jars or bowls.
  3. Add the fresh blueberries, pistachios, extra chia seeds and coconut on top of each to decorate.
  4. Enjoy!

About this recipe

This fresh dairy-free berry mousse is quick and easy to prepare and is a very healthy dessert or breakfast. It is full of fibre, protein and healthy fats but also full of flavour! Tofu is an excellent source of protein, iron and calcium, which are very important to help keep our bones and muscles healthy.


Instead of blueberries, you could add in any type of berries you like, or as an alternative, you could use frozen banana or mango.
